Is ther a way to select all of the notes with a specific spelling and then change their spelling. For example, I would like t change all Cb to B and Fbb to Eb.

It depends on what version of Composer or Musician you use.
If you use one of the latest versions please find attached how to modify a certain selected note region by enharmonic spelling. |

I'm using Composer 5. I didn't see any attachment.
