Actually Finale has it's own internal (and proprietary) soundfont set and audio engine, so the difference you're hearing is indeed between a soundfont (Finale's) versus your computer...

Actually you can use the two together. SynthFont has an option to "Activate MIDI Input." If you click that button, and run Composer, then SynthFont acts as the MIDI playback...
