You can hide those measures by using
Measures -> Collapse multiple measure rests

Notation Composer does not have its own sounds, but can use any MIDI device that you have plugged into or installed on your computer.

If you already have VSTis that you use, you may already have a set up that allows Notation Composer to "plug in" to the host for your VSTis. Open your VSTi host first. Then, if you have Notation Composer installed, run it and take a look at
Setup -> MIDI Devices Configuration

to see what Devices you have listed. If you only have the GS Wavetable, you will need to (1) install a virtual MIDI cable to communicate with the VST host and (2) you will probably want to disable the GS Wavetable.

To disable the GS Wavetable, in Composer
Setup -> MIDI Devices Configuration -> Port -> Select Ports

and uncheck the GS Wavetable box.
