When Notation Composer transcribes a song into sheet music, it makes a "best guess" about what the key of the song is, based on the notes that the file or recording contains. Some songs can be a bit ambiguous because they may be "modal." It sounds like Composer "guessed" (actually there's a fairly sophisticated algorithm) that the key was G rather than C. To change the key signature to C, simply double-click on the key signature itself in the score, and then change it to C in the dialog that pops up.

Whenever you add a new staff (Staff/Add staff) you can designate what instrument it will be by selecting it from the instrument grid at the bottom of the dialog box. This is probably the preferred method because then you can set the instrument you want it to be as well as hear it played as that instrument when you select the staff to record into it.

If you're just clicking on Record in the toolbar without first adding a new staff, then the default instrument will be whatever instrument is in the last staff in the song file. You can change it after the recording session by using the Staff/Setup dialog.
