Notation Software is a good place to start. Its creator, Mark Walsen, worked very hard to make software that provided a lot of intuitive ease of use with powerful features.

Notation Musician is the entry level program. It is designed to let you load pre-existing midi files (anything with a .mid extension) or record your own music with a midi capable keyboard. And, of course, play them. It has a limited set of editing features but can display and print notation very well.

Notation Composer is the top end product and is a very powerful and flexible recording, editing, playback and printing program. It's the program I use every day for my music -- and, no, I'm not an employee!
