septuplets or larger?
 
Is there a way to make customized groupings larger than the available triplet and quintuplet?

My understanding of your question is whether Composer has support for septuplets (7) and other larger sizes.

No, it just supports triplets and quintuplets. Among basic notation features that Composer doesn't currently support, the lack of support for other tuplet sizes is way near the top of the wish-list.

For now, you can work around the problem by, for example, constructing a 7-tuplet spanding a quarter note by making the first three notes three 16th triplets, which add up to an 8th note, and making the last four notes 32nd notes, to also add up to an 8th note, for a total duration of one quarter note. One can even rationalize this as being a 7-tuplet with an accelerations-- but that really is just a rationalization for the lack of 7-tuplet support in the current version of Composer.
